It’s Not A Diet – It’s A Lifestyle

keto.pngLast year, we both had our annual check-up with the family physician. After our exams, he ordered some lab work, mainly phlebotomy (blood work). Within a few days, Damsel got a call from their office advising that her tests had come back showing her to be in pre-diabetes (type 2) with high triglycerides. My results weren’t all that too hot either, with the usual (for me) high cholesterol and other chronic problems showing up (kidney, hypertension, etc.). The doctor recommended a low-sugar (i.e. low carbohydrate) diet for her.

The pre-diabetes condition was something that immediately needed attention. We searched for and found a volume on KETO pre-diabetic recipes that went a step further than food prep and described how a body typically could reverse the diabetic trend by eliminating most high-in-carbohydrates foods. After reading up on some of the science behind the recovery process, we both decided to adapt our food preparation and consumption habits. Damsel to try and slow down the diabetes potential and me to try and lose some of the fifteen or so extra pounds.

The first step was to purge from the pantry any and all items that were on an IMMENSE list of high carb no-nos. After filling up four good sized cardboard boxes of goodies headed out to the local food bank, we dutifully delivered them never to see the likes of those items in our pantry again. The list included rice, pasta, legumes, peas, corn, carrots, wheat flour, cornbread mix, pancake mix and so forth, most of which would regularly be included in our home-prepared meals.

We quickly adapted to the change and found many delicious recipes for low carb meals. There is plenty of on-line help on the food topic out there including Diet Doctor, plus there are cookbooks galore including many by TV Chef George Stella whose variety and clever substitutions for hi-carb goodies is a very good thing.

Early this year, after being on the new feeding arrangement for a few months, we saw the family doctor again. He prescribed follow-up testing to see how we were doing. When the test results came back, Damsel showed a definite drop in the triglycerides and other lipids that were now essentially normal. I did not see her A1C number, but the verbal report indicated it was now normal.

Damsel has lost a few pounds since the onset of the low-carb regimen, but more importantly, she is now in the green arc.

Me, on the other hand, I am now back to my high-school weight, having lost about 25 pounds. My weight is now stable and is normal for my height and build. I have now backed off of my blood pressure meds to about ⅓ of the previous dosage. I visited the kidney specialist and was advised that my marginal function had improved from 60 percent efficient to 80, which is fairly normal for my age (just turned 76 this week). My lipid numbers are all normal except for a high HDL cholesterol reading (a GOOD thing) and a low risk for cardio-vascular problems (a VERY GOOD thing).

The following excerpt* from one of our several books on the topic describes how we are neither starving nor craving these days:

Pride of Barbados Flowers Now Opening

It’s one of my favorite days of the year when the Pride of Barbados (a.k.a. Red Bird of Paradise) flowers start to open in our courtyard. The flowers are a little late in opening this year, probably due to climate change a cooler than normal spring. The daytime temperatures are now regularly in the high 90’s to low 100’s and the flower buds on all three of my red bird shrubs in the courtyard are ready to go.

Caesalpinia pulcherrima is a species of flowering plant in the pea family.

It is a shrub growing to 3 m tall. In climates with few to no frosts, this plant will grow larger and is semievergreen. Grown in climates with light to moderate freezing, plant will die back to the ground depending on cold, but will rebound in mid- to late spring. This species is more sensitive to cold than others. The leaves are bipinnate, 20–40 cm long, bearing three to 10 pairs of pinnae, each with six to 10 pairs of leaflets 15–25 mm long and 10–15 mm broad. The flowers are borne in racemes up to 20 cm long, each flower with five yellow, orange, or red petals. The fruit is a pod 6–12 cm long.

Caesalpina pulcherrima is the national flower of the Caribbean island of Barbados, and is depicted on the upper left and right corners of the Queen Elizabeth II’s personal Barbadian flag. Claire Waight Keller included pride of Barbados to represent the country in Meghan Markle’s wedding veil, which included the distinctive flora of each Commonwealth country.

IRS 2018 Tax Return Filed – Almost

irs_logo.pngWhen the new tax rates came into effect in early 2018, we did our spreadsheet analysis to try and pinpoint the correct withholding to use for the remainder of the tax year. I think we did pretty well with the withholding although we got a bit more in the deductions due to a couple of things: 1) we were especially generous this year with a couple of new pro-2A foundations* and 2) we paid the vehicle tax on the motorhome for 2019 in advance when we were upgrading to the W7GD call plates. All this resulted in a modest over-withholding to the tune of getting a good chunk back from the Feds and a small amount from the state. For the latter, our contributions to the Arizona Private Education Scholarship Fund completely eliminates any state income tax liability and are also deductible under 501(c)(3).

So, now all that is left to do is the actual filing; on-line for the Fed and via mail for the state. Since I only got the last of the 1099s today and because of an unusual circumstance involving class-action litigation from which we received a modest sum, I want to go over the numbers one more time before pulling the big handle.

So, that’s just about it for the 2018 tax fiasco. I am going to adjust the 2019 withholding spreadsheet since the Damsel will now start to get a small pension from her previous employer. We are still waiting for those figures to come in for us to account for them.

UPDATE 02/06/2019: Our refund was posted in the account today, less than ten days from the time we filed. The Feds seem to have the process worked out. Not so much Arizona, That refund is forecast to be deposited on or about the 11th of February. That’s still a lot faster than the old days.

‘Tis the Season to be . . . Tax Prepared?

tax-time-1040.jpgWell, maybe we’re not really hard over on getting the tax return for 2018 in the works just yet. We did, however, get our 2018 copy of the tax program we use and installed it on the laptop.

One thing we do want to evaluate is how well we did with our estimation of how much to withhold this year. We used IRS Notice 1036 to get a head start on the withholding and posted about it in February. With the new Tax Cuts, we hope to be fairly close on the figures. During the tax year we also tweaked the withholding a time or two.

Another item I am interested in seeing what effect it might have and that is having ordered my Ham Radio Call Plates also resulted in prematurely (in 2018 rather than 2019) paying the Vehicle License Fee on the RV which will increase the deduction for taxes paid. It’s not a trivial amount, so it will be interesting to see. We may wind up getting a refund again and you may know how I hate to lend the .gov interest-free $$$.

So, the program is installed and I will begin dribbling information into it over the next couple of weeks in order to gain an inkling as to how well our estimated withholding worked. I’ll post on that when I know something more.

Ham Radio Vanity Callsign Bonanza Day Results

New QSL Card

The Vanity Quest for a new 7th area Ham Radio Callsign is now over. We managed to get picked and won the callsign seen above. It was my third choice on the list I submitted in my application to the FCC on the 5th of November. I achieved my goal of having the new call before the end of 2018.

I started the Vanity Quest last January for a 7th district call when I “harvested” a silent key’s (deceased ham’s) amateur radio callsign by providing a letter requesting the call be released for reissue and a copy of the obituary to the FCC. I was disappointed when I didn’t get that call because the suffix was my first and last name initials. I was doubly disappointed when a guy from Illinois (out of the 7th district) got the call.

Before today’s result, I applied for 21 callsigns on 19 applications, all of which were dismissed. This morning when I read my email, the FCC notice was in my inbox. Now, I am pleased with the fact I got an old-timer W7 call and am happy with the Quest being at an end.

Lifestyle Change – Diet in Particular

Ever since Damsel retired about 20 years ago, we have enjoyed preparing delicious meals on the weekends. She runs the kitchen while I run the smoker and grill. Occasionally, I help in the kitchen (sous chef role) with meat cutting and grinding or with shredding cheese and other kitchen helper labors of love. Thus far, we have been able to prepare just about anything we see in a recipe or on the TV cooking and food channels or on internet social media.

A few weeks ago, Damsel went for her regular annual session with the family doctor. He checked her over and pronounced all the vitals to be within limits – however, he wanted her to get some routine blood work done. Her initial report was that triglycerides were a bit too high and the doctor prescribed another more specific blood test. The results from that test indicated a marginally high blood glucose level, also known as pre-diabetes.

The doctor’s advice was to change her diet to cut down on carbohydrate intake. Well, damn! just about all of our favorite foods are laden with carbs. We did some research on low-carb diets and actually found some literature on understanding the pre-diabetic condition and preparing meals with low carbohydrate counts. We also found other sites with recipes and information, one of which had the photo above of a “Garlic Butter Chicken with Parmesan Cauliflower Rice” recipe. It looks pretty good, no?

So, we’re both going on a low-carb diet. No more potatoes (and most other starchy root veggies), pasta ( 🙁 ), bread, pastries. fruit and a host of other goodies with high carbohydrate content. The only good news is that un-prepared meats of all kinds have zero carbs. Her diet will be to reduce blood sugar and mine will be to lose the 15-20 lbs that the doc has suggested.

Between a couple of low-carb cookbooks and websites like the one linked above, we should be able to prepare delicious food for our diets. In any event, we will not be denied wholesome, tasty meals just because of reduced carbs.

Cactus and its Pups Transplanted

Removed from Plastic Pot You probably remember our “Cherry RedTrichocereus Grandiflorus cactus, the one with the bright red or hot pink flowers. Well, today it was time to separate the overcrowded parent from the pups in the original pot.

Bob took his circular saw to the plastic pot in order to cleanly remove the cactus and its roots. The result is seen at the right – the cactus sans pot on a camo tarp. The tarp was there to retain the soil that we brushed away from the roots. The residual soil went into the transplant pots along with some local sandy soil.

The yield was the original main cactus and a bunch of pups ranging from mature to very small. All were transplanted into pots except for the very small pup which went into the ground in my xeriscape garden outside the courtyard main gate.

Before attempting to separate the cactus and pups, we consulted with several on-line sources describing methods for separating cacti of this type. We think that some of the pups that broke off of a main stem without the roots will develop them in their new pots (or in the ground) over time. The main cactus and larger pups had partial root systems that made it into the new pots.

We’re hoping that eventually we will have bright red flowers happening all over the courtyard and xeriscape instead of all in one place. You can see from the photos below that we are spread out a bit now. Click on any image to enlarge.
