Welcome to Damsel’s Diner. Over the weekend, we indulged ourselves by preparing this delicious blue-plate special: chicken-fried steaks with mashed taters and country-style green beans – served with a frosty mug of winter lager.
Although the meal seems a bit waistline-unfriendly, we did clean up the fat act somewhat. Damsel fried up the steaks in light oil in a pan (rather than deep-fried) and low or no-fat dairy products were used to prepare the mashed taters and gravy. The green beans were accented with onions, garlic and bacon bits. By the way, we used fresh-picked green beans that are still growing in Damsel’s garden.

looks great all but the green beans. I find I like my green beans left in the field to be turned under.
I can understand that, Kenny. I found myself sick of green bean and mushroom soup casseroles with French onions on top. Everyone seems to drag that stuff out for pot-luck dinners. Then I had fresh ones like these fixed in a southern style and never looked back.
This dinner, however, would be just as terrific with asparagus spears, okra, spinach or greens of any sort. If green is a problem then carrots or parsnips will do.

I’m wondering what the ag folks are doing to green beans these days. I find it is almost impossible to cook them to anything edible or tasty. I’ve purchased fresh, then snapped and simmered for as long as 40 minutes, and still they won’t soften. Is this the shipping tomato disease? If Damsel has a trick, I’d like to know.

Damsel just raises them out in the garden from a seed packet – Kentucky Wonder, I believe. When simmering one-inch pieces for about 9 minutes and combining with the bacon/savories, the beans come out al dente. Not soft, but with a little firmness. We like them that way.
