Today, Damsel and I prepared this sumptuous Italian mozzarella-stuffed meatballs served over angel hair pasta and topped off with Damsel’s killer Marinara sauce.
I prepared the ground meat from lean pork loin and beef round tip. I carefully trimmed the meats and blended the two together through the grinder.
Damsel added the herbs, spices and homemade Italian-style breadcrumbs. She stuffed each of the meatballs with ciliegine – a cherry tomato-sized ball of mozzarella cheese.

Home made cooking. Mmm gooood. I miss my wife’s cooking already and I have only been in Phoenix, AZ on my temp assignment for 2 weeks now. I have gone out some and also have been cooking some of my own meals. For instance I had a ribeye steak with eggs for breakfast this morning. Not too shabby. I will probably get around to making some Italian food in the next week or so, I’ll let you know how it turns out. Hopefully half as good as your dish tasted.
If the two of you will be in or near Phoenix in the near future, let me know. maybe we can get together for dinner somewhere. I am scheduled to be out this way until the end of March.
