Absolutely! I had leftovers for lunch today, but no can bring beer to work. The meal was tasty though.

We cooked the corned beef in a crock pot and baked the veggies according to a recipe found on the Food Network website. It was outstanding.
I had mine with some Golds Prepared Horse Raddish this year. Mmmmmmmm gooooood.
I have to say though, we had a much wetter piece than yours. I cannot stand corned beef, or Pastrami if either one is very lean though i know others like it that way. Whenever I go to a deli I ask for it wet, or in other words nice and fatty.
Damsel prepares the sauce – raw horseradish cut with sour cream. It’s pretty good!
I agree about the wet versus dry, but given the triglicerides and cholesterol counts, we tend to avoid the fat – our dog is the benefactor after we trim the meat. Poached in the crock pot, the meat is moister than it looks in the photo.
