The victory over the French army was a morale boost for the Mexicans.<\/p><\/blockquote>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/capnbob.us\/blog\/wp-content\/uploads\/2023\/05\/new-beltane.jpg\" alt=\"\" width=\"276\" height=\"89\" class=\"aligncenter size-full wp-image-9361\" \/><\/p>\n<blockquote><p><strong>Beltane<\/strong> is the Gaelic May Day festival. It is traditionally held on 1 May, or about midway between the spring equinox and summer solstice in the northern hemisphere. The festival name is synonymous with the month marking the start of summer in Gaelic Ireland.<\/p><\/blockquote>\n<p>Since both events are virtual invitations for feasting, that&#8217;s what we&#8217;re intending to do. Either occasion can be an excuse for enjoying some of Damsel&#8217;s <a href=\"http:\/\/vernabob.com\/blog\/vernas-stuff\/vernas-recipes\/\" rel=\"noopener\" target=\"_blank\">kitchen prowess<\/a>.<\/p>\n<p>Today, we will be celebrating Cinco de Mayo with <a href=\"http:\/\/vernabob.com\/graphics\/imageview.php?image=http:\/\/food.vernabob.com\/wp-content\/uploads\/2023\/05\/20230505-burritos.jpg\">Carnitas Burritos<\/a> prepared according to the traditional (but Keto adapted) Mexican fashion. Along with dinner, we will be enjoying a sugar-free <a href=\"http:\/\/vernabob.com\/graphics\/imageview.php?image=http:\/\/food.vernabob.com\/wp-content\/uploads\/2023\/02\/20230225-margarita.jpg\">Margarita<\/a> cocktail. <strong style=\"color:red;\">&iexcl;Salud! &iexcl;Feliz Cinco de Mayo!<\/strong><\/p>\n<p>Tomorrow, we plan to celebrate the Beltane <a href=\"https:\/\/www.starmythworld.com\/mathisencorollary\/2011\/05\/what-are-cross-quarter-days.html\" rel=\"noopener\" target=\"_blank\">cross-quarter<\/a> event. We found a recipe called &#8220;<a href=\"http:\/\/food.vernabob.com\/2023\/05\/06\/irish-stout-braised-chicken\/\" rel=\"noopener\" target=\"_blank\">Irish Stout Braised Chicken<\/a>&#8221; which calls for a number of traditional (to Celtic culture) vegetables in addition to chicken. We are looking forward to that feast as well and will celebrate with an <a href=\"http:\/\/vernabob.com\/graphics\/imageview.php?image=http:\/\/food.vernabob.com\/wp-content\/uploads\/2023\/02\/20230208-irish-coffe-waterford.jpg\">Irish Coffee<\/a>. <strong style=\"color:green;\">Sl\u00e0inte!
